This smooth delightful dish is a traditional speciality and has the right to be on TATUP! It’s a regular component of the malagasy breakfast and tastes like nothing else we’ve ever tasted!
In malagasy, mofo means bread. This word is at the origin of many variants. For example :
Mofo baolina -> Ball bread
Mofo dipaina -> an adaptation through a pleonasm (bread pain) to define the french look like half baguette, brought by europeans before
However, it’s the mofo gasy that caught my attention for the article. Mofo gasy means Malagasi bread
It’s 5 a.m when the family shop opens
In the kitchen, the father begins to "bake"
The pastry is a liquid, similar to a pancake pastry. It is made of rice flour with wheat flour which helps to thicken the mix and fresh yeast is used for the fermentation. Some bakers chose to add eggs to make it smoother and lighter.
The "baking" is made in a traditional fireplace
Mofo gasy have to be double side cooked
The first customers soon arrive. Cofee or tea are offered to those who eat mofo gasy on the spot
The mofo gasy
mofo baolina are also sold in this shop. These ones are fried
I thank Mr Johann and his family for welcoming me and allowing me to be part of the baking experience
Their shop can be found in Nanisana Road Analamahitsy district of Antananarivo.
